Who doesn’t love chocolate fudge brownies? I love a rich, fudgy chocolate brownie either as a little treat or as a dessert served up with ice cream. This recipe is super easy to follow and won’t take much time at all.
These yummy brownies have a slight crackled top and a very fudgy middle.

How to make chocolate fudge brownies
First take a square tin and line with parchment paper. I like my brownies to be thick and chunky, so I used a 7cm x 8cm tin. If you like your brownies to be less chunky, then just use a larger, shallower tin.

Now weigh out all the ingredients – only six ingredients are needed for this recipe. Fill a sauce pan with water and place the butter and dark chocolate in a bowl above the water. Slowly heat the water whilst making sure the bowl doesn’t touch the water. Once the butter and chocolate have melted, leave aside for it to cool. You could also just pop the mixture into the microwave for around 20 seconds at a time constantly checking until the mixture has melted.

While the chocolate is cooling, add the eggs and sugar to your mixing bowl and whisk for around 3 minutes until the mixture is frothy.
Add the melted chocolate to the mixture in the bowl and fold in with a wooden spoon.

Sift the flour and cocoa into the mixture and mix well.

Pour the mixture into the square tin and place in the oven for 35 minutes. Keep an eye on the brownies in the oven and don’t let them overcook. The top should have a slight crackle and not much of a wobble. Wait for the mixture to be totally cool before cutting them into squares.

- 75 g Plain flour
- 150 g Dark chocolate
- 40 g Cocoa powder
- 275 g Caster sugar
- 175 g Unsalted Butter

Preheat the oven to 180°C. Line a square tin (7"x 8") with baking parchment.

Fill a saucepan with water. Place a bowl with the butter and dark chocolate on top of the saucepan. Slowly heat the water but don't allow the water to touch the bowl. Once the butter and dark chocolate has melted, leave aside to cool.

Add the eggs and sugar in the food mixer and mix for around 3 minutes or until its a frothy mixture

Add the cool chocolate mixture to the mixing bowl and stir with a wooden spoon

Sift the flour and cocoa into the mixture then stir well.

Pour the mixture into the square tin

Place the tin into the oven for around 30-35 mins, until the top is slightly cracked. Be careful not to over cook the brownies.

Take the brownies out of the oven and leave to cool completely. Once cooled, cut the brownies into squares. The longer you leave them before cutting, the fudgier they are!
