This easy to follow recipe for homemade spaghetti bolognese is perfect for an evening meal and great if you’re looking to batch cook.  So simple to make and is absolutely delicious.

Ingredients
Bolognese Sauce
  • 2 tbsps Cooking Oil (We use rapeseed oil)
  • 6 medium Onions (Can use either red or white. Chop the onions)
  • 4 /5 cloves Garlic (Finely chopped)
  • 4 medium Carrots (Finely chopped or grated)
  • 2 kg Beef mince (Fresh or frozen)
  • 6 tins/cans Chopped tomatoes
  • 350 ml White wine (Although some people do prefer red)
  • 2 Beef stock cubes (You can substitute with granules or fresh stock)
  • 3 tbsps Marjoram (Dried usually gives a more intense taste)
  • 1 tbsp Oregano
  • 2 tspns Paprika
  • 2 tspns Nutmeg
  • 250 ml Milk (We use semi-skimmed)
  • 2 tbsps Brown sugar
  • 250 grams Mushrooms (Finely sliced)
  • 3 Bay leaves
  • 1 tspn Salt (Vary the salt according to taste but don't omit)
  • 2 tspns Black Pepper
  • Add water if sauce too thick
Spaghetti
  • Dried or fresh spaghetti (According to number of people)
  • Water to boil
Instructions
How to Make the Bolognese Sauce
  1. Add oil to the cooking pot

  2. Then add the chopped onions and sauté until slightly browned

  3. Add garlic and the finely grated carrots for 3 minutes and continue frying

  4. Add the beef mince and cook until brown

  5. Add the tinned chopped tomatoes and stir. Don't forget to add a little water to the empty cans to get the last bit of all the juices out.

  6. Add the white wine, beef stock cubes, dried herbs, spices, milk and brown sugar. Stir the mixture

  7. Add the finely sliced mushrooms

  8. Add water if mixture too thick as it will reduce down when cooking

  9. Bring to the boil then turn down the heat to simmer for a couple of hours

  10. These are the ingredients I use but feel free to alter the amounts according to your taste or omit or add any other ingredients you specifically like in your Bolognese!

How to Cook Dried Spaghetti
  1. Add water to the saucepan and bring to the boil

  2. Add the dried spaghetti to the boiling water

  3. Turn the heat down to moderate and cook for around 10 minutes or until the spaghetti is 'al dente'

  4. Fresh spaghetti cooks faster than dried so around 2/3 minutes depending on amount

  5. Note: You can either add the spaghetti to a portion of the bolognese sauce to cook or boil in water separately.

Serving
  1. Serve with a good sprinkle of parmesan cheese and a side of garlic bread... Mmmmmm
