A Fantastic Private Cookery Class @ The Riad Star, Marrakech – WhodoIdo: Being huge foodies, we thought it would be a great idea to learn how to cook a few traditional Moroccan dishes. What better way to learn than to book a cookery class at our riad. Get the chance to make Moroccan salads and tasty tagines!

A mix of sweet juicy tomatoes, peppers, parsley and coriander served warm

Ingredients
  • 1 tbsp Olive Oil
  • ½ to 1 tspn Cumin - to taste
  • ½ to 1 tspn Paprika - to taste
  • ½ to 1 tspn Ginger - to taste
  • ½ to 1 tspn Tumeric - to taste
  • 3 cloves Garlic
  • 4 Large Tomatoes
  • 3 Mixed Peppers
  • 1 Handful Parsley
  • 1 Handful Coriander
  • Salt & Black Pepper - to taste
Instructions
  1. Chargrill the peppers in the oven until blackened. Transfer them into a plastic 

    bag and leave for 5 mins. Peel the skins off and then chop.

  2. Slice an 'X' at the bottom of the tomatoes, remove the core and place them in 

    boiling water for 1 min. Remove with a slotted spoon and place in ice cold 

    water.

  3. Remove and peel the skins off the tomatoes. Cut in half, squeeze out the

    seeds then roughly chop.

  4. Chop a mix of parsley and coriander.

  5. Chop the garlic.


  6. Heat a frying pan with some olive oil.

  7. Add the garlic, chopped tomatoes, salt and black pepper to taste and stir for 2

    minutes.

  8. Finally add the chopped peppers and stir for a further 2 minutes.

  9. Simmer for 5 mins and then serve.
